Welcome to the divine world of desserts where simplicity meets indulgence! This Greek Honey Ricotta Pie recipe is a delightful blend of creamy ricotta, luscious honey, and a touch of cinnamon, all nestled in a buttery, flaky pie crust. Brace yourself for a gluten-free sensation that’ll have your taste buds doing a happy dance! Easy to make and impossible to resist, this recipe promises a slice of heaven in every bite.

Ingredients:

  • 4 Eggs
  • 1/2 cup Honey (for the sweet tooth!)
  • 1 tbsp Lemon Juice (for that zesty zing)
  • 1 1/2 tsp Cinnamon (because cinnamon is the superhero of spices)
  • 1 tbsp Corn Flour/Corn Starch (to thicken things up)
  • 1 tsp Salt (just a pinch to keep things interesting)
  • 1 tbsp Sugar (for that extra sweetness)
  • 1 tsp Vanilla Extract (for that fancy flair)
  • 1 tsp Apple Cider Vinegar (because vinegar isn’t just for salads!)
  • 2 sticks Unsalted Butter (butter makes everything better)
  • 2 cups Soft Myzithra Cheese (ooey-gooey goodness)
  • 1/2 cup Water or Milk (your choice, because flexibility is key)
  • 2½ cups Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour (plus more for your workspace)

Instructions:

  1. Preheat your oven to a temperature that’ll make your kitchen feel like a warm hug—let’s say 175°C
  2. Mix together eggs, honey, lemon juice, cinnamon, corn flour, salt, sugar, vanilla extract, and apple cider vinegar. Whisk it like you’re on a cooking show, impress yourself!
  3. Melt those unsalted butter sticks and add them to the mix. Embrace the buttery goodness.
  4. Add the Myzithra cheese to the party and make sure it gets comfy in the mix.
  5. Slowly pour in your choice of water or milk, stir it gently like you’re stirring in some top-secret ingredients.
  6. Gradually add in the gluten-free baking flour until everything comes together like a dream. Sprinkle some more flour on your workspace and roll out your pie crust like you’re Picasso but with pastry.
  7. Pour your creamy concoction into the pie crust. Don’t hold back; let it all in there!
  8. Bake in your preheated oven for around 45-50 minutes. Use this time to practice your victory dance because you’re about to create a masterpiece.
  9. Once it’s done, garnish it with a sprinkle of honey and cinnamon, like the fairy dust of desserts.
  10. Let it cool a bit (if you can resist), slice it up, and enjoy your creation! Remember, calories don’t count when it’s this delicious.

Note: If you’re not into gluten-free, you can totally swap the flour, but trust me, this pie is still going to be amazing.
